This dish is an absolute no brainer! It’s incredibly easy to make and offers so many different colorful veggies. It’s light, crisp and easy to prep. Perfect for the summer months and highly adaptive. Use whatever veg you have on hand and don’t be afraid to play with different combinations. If you’ve never tried soba noodles before, they are a Japanese buckwheat noodle and a good source of manganese, thiamin, protein (1 cup soba = 6 g protein) and soluble fiber. They’re also gluten-free and a prebiotic food, which means that they feed probiotics and thus support a healthy gut microbiome!

- Preheat oven to 400 degrees and line a baking tray with parchment paper. Next, wash chop and season broccoli with olive oil, salt, pepper and garlic powder. Cook for 20-25 minutes.
- Then, wash and chop all remaining vegetables and set aside. Cook soba noodles according to package instructions and mix all dressing ingredients in a small food processor.
- Finally, combine noodles, vegetables and dressing. Mix and top with more chopped green onions, cashews and enjoy!
- Option to top with portion of protein.
