This is a fun way to prepare zucchini that feels a little bit indulgent while still being super healthy. The towers are surprisingly flavorful for only 5 ingredients and each bite is a little bit crunchy (from the top) and a little bit soft (from the middle). All in all, it’s a minimal ingredient – minimal effort recipe that goes great as a side with any lean protein and a healthy grain. Make them once and I guarantee you will make them twice!
Cheesy Zucchini Towers

- Preheat oven to 420 degrees.
- Wash and thinly slice zucchini using a sharp knife or mandolin. Sprinkle with salt, paprika, ½ cup parmesan cheese and 1 tsp olive oil. Mix well.
- Then, lightly coat a muffin tin with olive oil and stack your zucchini slices on top of one another in each tin (about 8 in each).
- Top with the remaining grated parmesan and bake for 20 minutes or until golden brown. Enjoy as a side to any main or as a snack on their own!
Notes
This recipe is easy to double to feed 4 as a main dish. If you can, try to find eggplant that is a uniform size all the way down the eggplant (eggplant that has a very large bulb at the end makes for more variation in pizza size).
