I kid you not, this is the most gorgeous dip you will ever make! It’s also probably the easiest dip you will ever make and arguably the most healthy, too. Moral being: do not sleep on this recipe! It’s creamy, full of flavor and a great recipe to make in bulk at the start of the week. Enjoy on crackers, as a dip, salad topper, sandwhich spread or add it to your next charcuterie board!
Golden Carrot Dip

- Soak raw cashews in filtered water for at least 30 minutes and bring 1 large pot to boil on medium-high heat.
- Wash, peel and chop carrots. Once water is boiling, add carrots and cook until soft (about 10 minutes).
- Then, transfer carrots to Vitamix or high speed food processor and add rinsed cashews, cumin, salt, extra virgin olive oil, water and blend until soft and creamy.
- Enjoy on crackers, as a dip, salad topper, sandwhich spread or add it to your next charcuterie board!
