- Preheat oven to 400 degrees.
- Slice eggplant into ¾ inch thick slices and brush both sides lightly with olive oil. Generously sprinkle with salt and minced garlic. Then, transfer to a baking sheet and bake for 15 to 20 minutes, until eggplant is slightly tender but not soft.
- Remove eggplant from the oven, top with a thin layer of sauce and sprinkle with chopped basil. Add mozzarella cheese and top with another pinch of salt.
- Transfer back to oven and broil until cheese is melted and lightly brown, about 4 minutes. Finally, top with more basil and enjoy.
Notes
Do your best to choose an eggplant that is mostly uniform in size. This will create the most similar in size pizzas.
