The level of excitement I feel coming home from a trip, ready to integrate everything I learned along the way is without a doubt my favorite feeling! Here’s the cliffs notes:

Miso White Bean Stew
Serves 4 - 6; time 25 mins

Ingredients
* 1 large shallot, finely chopped
* 3 cloves garlic, finely chopped
* 1 tbsp extra virgin olive oil
* 1 15-oz can organic white cannellini beans
* 1 bag frozen organic peas, cooked
* 3 tbsp nutritional yeast
* ¼ cup organic white miso paste
* ½ cup filtered hot water
* 1 lemon, juiced
Optional: focaccia bread or bread of choice

Method
1. Cook frozen peas according to package instructions. Drain, rinse and set aside.
2. Then, heat a saucepan to medium high heat. Coat with 1 tbsp extra virgin olive oil; add chopped shallots and garlic. Stir with a wooden spatula and cook until fragrant and translucent.
3. Next, add cannellini beans and continue to stir. While that’s cooking, in a small mixing bowl, add miso paste and filtered hot water. Mix well until a thickish consistency forms. Then, add to the saucepan and continue to stir.
4. Top with about 3 tbsp nutritional yeast and the juice of 1 lemon
5. Enjoy with focaccia bread or any other bread of your choosing. Also goes great with grains, rice or as a side to lean protein.

Overnight Zucchini Oats 😏
Serves 1; time 10 mins (plus refrigeration)

Ingredients

* ½ cup organic rolled oats
* ⅓ cup organic zucchini, grated
* 1 tbsp chopped walnuts
* 1 tbsp plain Greek yogurt
* 1 tbsp hemp seeds
* 1 tsp cinnamon
* tsp vanilla extract
* 2 tsp pure maple syrup
* ½ cup plant based milk, of choice
* 1 tbsp cashew butter
* 3 tbsp organic blueberries
* Optional: 1 serving vanilla protein powder

Method

1. Using a standing box grater, grate washed zucchini. Then, in a small mason jar or glass container that can be tightly closed with a top or lid, add all ingredients and stir well to combine.
2. Once assembled, transfer to the refrigerator overnight or perhaps for a few hours, depending on time and enjoy cold or warm up on the stove (or microwave).
