3 medium ripe bananas
2 eggs
½ cup 2% plain Greek yogurt
⅓ cup maple syrup
1 tsp vanilla extract
1 tsp baking soda
1 ½ cups whole wheat flour
2 tbsp coconut sugar
1 cup blueberries
½ cup chopped walnuts
Baking spray, for cooking

Preheat oven to 350 degrees. Then, in a large mixing bowl, add bananas, eggs, Greek yogurt, maple syrup, vanilla and baking soda.

Mix well, then, add flour, coconut sugar, blueberries and chopped walnuts. Continue stirring in ingredients until thoroughly mixed.

Then, spray a 9x5 bread pan with cooking spray and fold in your banana bread mixture. Top with a sprinkle more coconut sugar and bake for about 45 minutes or until a toothpick comes out clean from the middle.
