¼ cup hot sauce, for chicken marinade
1 cup low fat cottage cheese
2 Tbsp hot sauce
1 Tbsp Ranch Seasoning
3 stalks celery, finely chopped (about 4 Tbsp)
¼ red onion, finely chopped (about 3 Tbsp)
3 tortillas, I used Hero (7 g protein per serving)
1 Tbsp mayonnaise
2 Tbsp cheddar cheese, grated
Avocado Oil Spray, for cooking

Directions

Thinly slice organic pasture raised chicken breast lengthwise and marinate in ¼ cup hot sauce for at least a few hours or overnight.

When ready to eat, remove from the fridge and heat a pan to medium heat; coat with avocado oil spray and cook for 3 - 4 minutes on each side or until done.

Then, using a standing mixer, mix cooked chicken until thoroughly shredded. Add celery, onion, cottage cheese, herbs, 1 Tbsp more hot sauce, and continue to mix until desired consistency has been achieved.
