1 lb Brussels sprouts, thinly sliced
1 broccoli crown, chopped
5 strips bacon, baked and finely chopped
5 Medjool dates, pitted and chopped
½ cup carrots, grated
½ cup red onion, finely chopped
1 cup goat cheese, crumbled
2 T walnuts, finely chopped
For the Dressing
½ cup extra virgin olive oil
2 T local honey —- why local
3 T dijon mustard
2 T apple cider vinegar
1 t garlic powder
½ t onion powder
½ t salt

Directions

Preheat the oven to 400 degrees F and cook bacon on a wire rack lined baking tray for 20 minutes or until crispy; do this to remove a lot of the fat.

While that’s baking, thinly slice Brussels sprouts; grate carrot; and chop broccoli and red onion. Transfer to a large mixing bowl and set aside.
