¼ cup fresh basil, chopped
2 cloves garlic, minced
Salt and pepper, to taste

Directions

Preheat oven to 400 degrees.

Slice eggplant into 3/4 inch thick slices and brush both sides lightly with olive oil. Generously sprinkle with salt and minced garlic. Then, transfer to a baking sheet and bake for 15 to 20 minutes, until eggplant is slightly tender but not soft.
