1 zucchini or summer squash
1 tsp salt
1 tbsp neutral, high temperature oil such avocado oil
For the spread
4 cloves garlic
3 tbsp goat cheese
2 tsp extra virgin olive oil
2 tbsp plain yogurt
½ tsp salt (I used Jane’s)
1 tablespoon fresh mint
1 tsp lemon juice

Directions

1.

Wash and halve the zucchini lengthwise. Then, score the cut side in a crosshatch pattern (see photo above), so that the salt can be absorbed.

Generously salt the scored side of the zucchini so that it is evenly distributed. Then, leave the zucchini for 10 - 15 minutes. This will help to draw out unwanted moisture.

While the zucchini is sitting, preheat the oven to 450 degrees. After 10 - 15 minutes, pat the zucchini dry with paper towels.

Heat a cast iron pan over medium heat and pour enough oil to coat the bottom. Then, add the zucchini, cut side down, and adjust the heat to allow the zucchini to sear and caramelize without burning.

Cook for about 5 minutes, checking occasionally, until zucchini browns. Then, flip zucchini and place in the oven to cook for 20 - 25 minutes or until the zucchini is completely soft.

While zucchini are roasting, combine garlic, goat cheese, extra virgin olive oil, plain yogurt, salt seasoning, fresh mint and lemon juice in a small food processor. Blend until creamy.

Once zucchini is finished, transfer to a serving plate and enjoy over a generous spread of the whipped goat cheese mixture.
