1 organic onion, diced
2 medium size organic zucchinis, chopped
2 tsp salt
3 tbsp extra virgin olive oil
6 cloves garlic, minced
2 tsp cumin
½ bunch fresh parsley, chopped
½ bunch fresh mint, chopped
1 lemon, juiced

Directions

Sauté chopped onion and zucchini with 2 tbsp olive oil and 1 tsp salt on medium heat. Cover and let cook.

Then, add minced garlic, 1 tsp salt, 1 tbsp olive oil and cumin. Continue to sauté until everything becomes soft and the majority of the water has evaporated (about 5-10 minutes).
