Ingredients
- 1 lb organic carrots
- 1/2 cup raw cashews, soaked, rinsed and drained
- 1 tsp cumin
- 1 tsp salt
- 3 tbsp extra virgin olive oil
- 4 tbsp filtered water
Directions
- Step 1
- Soak raw cashews in filtered water for at least 30 minutes and bring 1 large pot to boil on medium-high heat.
- Step 2
- Wash, peel and chop carrots. Once water is boiling, add carrots and cook until soft (about 10 minutes).
- Step 3
- Then, transfer carrots to Vitamix or high speed food processor and add rinsed cashews, cumin, salt, extra virgin olive oil, water and blend until soft and creamy.
- Step 4
- Enjoy on crackers, as a dip, salad topper, sandwhich spread or add it to your next charcuterie board!
