Golden Carrot Dip: Creamy, Bright and Surprisingly Addictive 

If you’ve ever found yourself standing in front of the fridge wondering what to eat again, this one’s for you. One of the easiest ways to eat healthier, more consistently, is to prep a few standout dips and sauces ahead of time. A good dip can totally transform simple ingredients into a satisfying, nourishing meal — and this Golden Carrot Dip is one of my favorites for exactly that!

It’s earthy, a little sweet, lusciously creamy, and full of warming flavor from cumin and olive oil. Plus, it’s packed with fiber, plant-based protein, and healthy fats — all while feeling light and bright enough for everyday use. Make a batch, pop it in the fridge, and you’ve got a nutrient-rich upgrade ready for anything: spread it on sandwiches, scoop it with crackers, top your grain bowls or salads, or sneak it onto your next charcuterie board. It’s versatile, vibrant, and just so easy.

Why Dips Like This Make Meal Prep Easier

Meal prepping doesn’t have to mean full containers of pre-portioned everything. Sometimes, it’s about the extras that make healthy eating way more enjoyable and sustainable. Having a few homemade dips or spreads on hand saves time, supports better choices, and gives otherwise simple meals a serious flavor boost.   • Want it spicier? Add a pinch of cayenne or fresh garlic for a little heat.
  • Low-oil option? Reduce olive oil to 1 tbsp and add more water or a splash of lemon juice to maintain creaminess.

Golden Carrot Dip

Ingredients
  • 1 lb organic carrots
  • 1/2 cup raw cashews, soaked, rinsed and drained
  • 1 tsp cumin
  • 1 tsp salt
  • 3 tbsp extra virgin olive oil
  • 4 tbsp filtered water
Directions
Step 1
Soak raw cashews in filtered water for at least 30 minutes and bring 1 large pot to boil on medium-high heat.
Step 2
Wash, peel and chop carrots. Once water is boiling, add carrots and cook until soft (about 10 minutes).
Step 3
Then, transfer carrots to Vitamix or high speed food processor and add rinsed cashews, cumin, salt, extra virgin olive oil, water and blend until soft and creamy.
Step 4
Enjoy on crackers, as a dip, salad topper, sandwhich spread or add it to your next charcuterie board!
