I did finally find a wrap that I like; key word being finally. And because it took me so dang long to find, I couldn’t resist trying the viral 2 ingredient blender wrap. Plus, I’m at an age where I really enjoy having multiple ways and means of doing something. Like going to my parents house and whipping up a quick batch of almond milk because they ran out. Haven’t done this? Trust me, the praise you’ll get for making something out of nothing… it’s priceless. And if they don’t praise you, you can praise yourself because cooking is exactly that: you’re making something delicious that also serves a purpose. ½ red pepper, thinly sliced

Directions

In a Vitamix or high speed blender, combine spinach, eggs and garlic. Blend well until thoroughly combined.

Next, heat a pan to medium high heat. Coat well with avocado oil spray (or whatever spray or oil you have on hand) so the wrap doesn’t stick.

Then, pour spinach and egg mixture into the pan and cook for 2 - 3 minutes on each side. Flipping is a bit tricky, so I recommend thinking about this wrap like a pancake; flip when small bubbles start to form and it looks together enough to withstand without breaking.

Once your wrap is done, transfer to a piece of parchment paper and top with hummus, avocado, turkey, cheese, and red peppers. Carefully roll it up, slice it in half and enjoy!
