1 piece sourdough toast, toasted to your preference
½ small yellow zucchini, sliced
1 tbsp extra virgin olive oil, for seasoning and cooking
1 cup cottage cheese
1 handful fresh mint, chopped
¼ lemon, juiced
1 tsp Jane’s Seasoning
Sprinkle garlic powder

Directions

Wash, slice and season zucchini with extra virgin olive oil, Jane’s seasoning and garlic powder. Then, sautee on medium heat until golden brown.

While zucchini is cooking, toast bread, chop mint and combine in the same bowl used to season the zucchini. Mix well; this will also serve to season the cottage cheese.
