4 garlic cloves, minced
2 tbsp extra virgin olive oil
¼ tsp salt
1 cup rice, cooked
3 tbsp cilantro, chopped
2 limes, juiced
4 stalks green onion, chopped
5 small cucumbers, chopped
For the dressing
½ cup extra virgin olive oil
¼ cup white balsamic vinegar
2 tbsp lemon juice
2 tbsp Dijon mustard
⅓ cup fresh mint
½ tsp salt

Directions

Preheat the oven to 450 degrees Fahrenheit. Cook rice according to package instructions. Add chopped cilantro and lime. Set aside.
