2 hard boiled eggs, grated with a microplane
2 pieces sourdough bread, toasted
About 1 tbsp mayonnaise, of choice
1 ripe avocado, smashed
2 stalks green onion, thinly sliced
Drizzle of fresh lemon juice
Sprinkle of salt

Directions

Bring a pot of water to boil and gently slide in eggs using a spoon or ladle. Boil for 10 minutes. Then immediately transfer to a bowl of ice water and let cool for 5 - 7 minutes.
