1 cantaloupe melon scooped out with a melon baller; about 1 ½ cups | |

For the pesto
3 handfuls basil | |
⅓ cup pine nuts | |
½ cup olive oil | |
1 lemon, juiced | |
1 handful spinach | |
½ cup parmesan cheese | |

Directions

For the pesto, combine all ingredients in a small food processor and blend well until smooth. Taste, adjust and set aside in the refrigerator until ready to eat.

For the skewers, using a melon baller, create little balls of cantaloupe. Then assemble with mozzarella, basil leaves, cherry tomatoes and pieces of prosciutto. You can combine and mix in any way or combination you like! Once your skewers are assembled, drizzle with pesto and serve with a side dish for dipping.
