For the sauce
1 cup plain Greek yogurt
¼ cup chopped herbs (Dill, parsley, chives, mint etc.)
½ lemon, juiced and zested
1 tsp salt

Directions

Preheat the oven to 425 degrees Fahrenheit.

Wash, scrub and chop potatoes into roughly 1-1 ½ inch pieces; I like mine more bite-sized but if you prefer them to be bigger, please follow your heart.

Season potatoes with extra virgin olive oil, salt and garlic powder, and coat well with your hands. Bake for 40-45 minutes and flip halfway through.

While potatoes are roasting, put together yogurt sauce. In a small mixing bowl, add Greek yogurt, herbs, lemon juice, lemon zest and salt. Adjust for taste and transfer to the refrigerator until potatoes are done.
